Looking for a crepe recipe.. except...

I'm allergic to dairy, nuts, & sulphites. So I don't often use coconut.

Does anyone have a recipe using potato starch by any chance?

    Thanks!

Oh crap, there's a connection to coconuts and sulfites? I have a really bad problem with sulfites giving me immediate and severe migraines, but haven't had any problem with coconut water, coconut oil or shredded coconut.

a recipe that has worked for me in the past is this one. it's not coconut-free, but i'm sure you can sub potato starch w/o issue (and obviously cook it in some other type of oil!). since the starch/flour is only there to help thicken the batter, it' a pretty adaptable recipe to w/e you have on hand (xanthan or guar gum works, too). you can also try making crepes with just egg and a little bit of water, but those can be frustrating because they're so delicate. hope that helps.

Sulphite is a preservative... If you're buying organic you're probably fine.
