    Post Breakfast Sandwiches

Okay, I'm searching for a posting w/o luck. I am looking for something similar to what it appears you all call the McGrok. It may have been something from the main MDA page, but I don't recall. People talked about freezing some and pulling them out of the freezer to heat up each morning... Yes, sausage (or bacon or ham - it's all good), eggs, cheese... I miss bread and need to start finding ways to easily using the coconut and almond flours I have...but I"m a bit nervous to do so... I think if I can incorporate that then I won't have cravings for things like hamburgers. I miss something with a "bun". I've got to get back on the wagon, so I'm intrusting my fellow grokers to give some great suggestions. Thanks!

    bread w/ almond flour

I don't know about the "McGrok" but I follow a recipe for a bread using almond flour that would be perfect for making a breakfast sandwich.

    1/4 cup almond flour
    1 TBSP butter, melted
    1 tsp. baking powder
    1 egg
    dash of salt
Mix and then put into buttered ramekin or small bowl. Microwave for 1 minute 20 seconds. Remove and slice.

A three inch ramekin is about the perfect sammich size. It makes enough for two sandwiches for me but slice it think and only use it as a vehicle for what I'm putting in it. I love it and so does my 8 year old. He's a bread fanatic and hates that I don't keep it in the house but this works for him. Good luck!

That sounds quick and easy...something I find challenging in primal eating. Were you recommending slicing thin or thick? I wasn't sure... Thanks.

Sod fake flours! That's imitation! Paleo is not about imitating your pre-paleo ways! Paleo IS gorgeous food that you want to eat, regardless of what the inspiration is.

Make MORE meat and pop whatever it is you want to put onto bread onto crisp lettuce leaves. This is actually quite important - the "bread" is simply a means of conveying the (whatever) to your mouth ... in a posh manner. Boost the (whatever) and maybe use blended avocado flesh as "butter". That's guacamole in most languages.

Have a look at my potted meat: living in the ice age: Potted Beef, or chilli con carne: living in the ice age: Chilli Con Carne - you'll get the idea. Crisp lettuce is a great alternative to bread, but you do need to boost the "butter" and the topping. Cos lettuce is my personal favourite - a great "bread" for all manner of things you used to spread on bread. Cos can even be used as rudimentary "chappatis" with curry and fold over into wraps for "tortillas".

This is not substitution, this is supplanting! Bread? We don't need no dirty bread!

Portabello mushroom caps-- the answer to all things sandwich. I'd totally throw down some fried eggs & breakfast ham in between two of those bad boys!
