Strawberry Mozzarella Salad with Mint Pesto (delicious!)
1 pound fresh sliced strawberries
1 pound fresh mozzarella cheese in 1/2 inch slices
1 t honey
3/4c olive or coconut oil
1 cup mint leaves
1 clove garlic
1 T balsamic vinegar
Combine strawberries and honey (or stevia or omit sweet)
In food processor or blender combine oil, mint, almonds, parmesan, garlic
Layer mozzarella on plate; spoon strawberries, followed with pesto. Garnish with mint leaves.
