    Strawberry Mozzarella Salad with Mint Pesto

    Primal Fuel
    Strawberry Mozzarella Salad with Mint Pesto (delicious!)

    1 pound fresh sliced strawberries
    1 pound fresh mozzarella cheese in 1/2 inch slices
    1 t honey
    3/4c olive or coconut oil
    1 cup mint leaves
    1/4c almonds
    1/4c parmesan
    1 clove garlic
    1 T balsamic vinegar

    Combine strawberries and honey (or stevia or omit sweet)
    In food processor or blender combine oil, mint, almonds, parmesan, garlic
    Layer mozzarella on plate; spoon strawberries, followed with pesto. Garnish with mint leaves.

    I love strawberries with balsamic vinegar, and I put them in salads too.

    This sounds brilliant! Almost a caprese salad but w/ stawberries. Since I can't eat nightshades, this is almost as close as it gets. Thanks for posting!

    Thanks for sharing this wonderful recipe here...!!
    As it is completely new for me so I'll definitely gonna give it a try this coming Sunday and hope it will make well..!!

    I took your ingredients and mussed them all up xD I made:

    Chopped strawberries, chopped mozzarella, chiffonade cut mint leaves, chopped proscuitto sauteed with bay scallops all mixed together with balsamic and extra virgin olive oil poured over. Was fantastic! Thanks so much for the inspiration
