I saw some at the farmer's market, so I thought I'd give it a try. From my research, it's pretty similar, nutritionally, to zucchini squash, which is one of my favorites. And, omigosh! It is so good, so sweet. I deep fried it in coconut oil and then added a little crème fraîche (using the recipe on this site). It's really good without the crème fraîche, AMAZING with it.

I definitely have a new vegetable to add to the mix.
