CJ: There are others on this Forum who are much more well versed in this than I, but yes: there are GOOD fats. Coconut oil is one of them. I have felt really good, and my skin got SO much better, since I started using CO for cooking. If the mild coconutty flavor doesn't go with what I'm making, I also use Ghee, which is clarified butter.
