    Strawberry Vinaigarette



    Paleo Strawberry Vinaigrette
    Ingredients:

    3/4 cup olive oil
    1/4 cup balsamic vinegar
    about 6-8 strawberries
    thyme
    1 Packet or 1 tsp. of stevia
    salt and pepper to taste

    Directions:

    Put ingredients in blender and blend until creamy consistency
    Enjoy!

    That's awesome!

    I've made something similar. I soaked some berries (straw- and raspberries) in some apple cider vinegar for a day or so (turns into a reaally pretty, red colour!), mixed the vinegar with some melted coconut oil and used that as a vinaigrette.
    I also tried mixing it with coconut milk, a little salt and pepper, and that was also really good!

    Mmm... I'm frying bacon right now and a couple of strips will be going in my lunch salad. I also happen to have a small container of strawberries in the fridge so guess what I'm going to have with my bacon/beef salad?!

    But minus the stevia. I'm finding I don't need anywhere near the sweetness in my food that I used to take.
