Gluten Free Sugar Free Island Teriyaki Marinade
I used to love a commercial brand of Island Teriyaki marinade for my pork chops and chicken. But it contained gluten and I really want to avoid gluten. So I came up with this recipe. The pineapple juice provides plenty of sweetness without having to add any extra.
1 cup organic, no-sugar added pineapple juice, reduced to 1/2 cup
1-2 tsp. fresh grated ginger (I use the stuff in the jar)
1 tsp. fresh chopped garlic (same from jar)
1 tsp. onion powder
1/4 cup toasted sesame oil
4-6 T. wheat/gluten free tamari
To reduce pineapple juice, place in small pot & bring to boil, turn to medium-low and simmer 15-20 minutes until it's reduced to half a cup. Place in glass measuring cup with 1 tsp. of the ginger, garlic, and onion powder. Add sesame oil and 4 T. (1/4 cup) of tamari sauce. Stir and taste. Add more tamari or ginger if desired, to taste. Makes about 1 cup.
When cool, place in ziploc bag with pork chops or chicken thighs and drumsticks. No need to salt the meat as there is enough salt in the tamari. Marinate for 6-12 hours. Grill meat and enjoy.
