I am still (on Primal path for one year this month!) getting used to the taste of coconut oil. Still find it hard to take straight, and have tired of flavoring it with chocolate. ( What? The concepts "chocolate" and "tired of" do not make sense together to me either.) In any case, here's my latest trial, which goes down pretty easy.
Cheesecake Coconut Oil Sauce
1 cup (8 volume oz) OG cold-pressed coconut oil
4 oz sour cream
1 oz cream cheese
1 tbs fresh lemon juice
1/4 tsp salt
grating of lemon rind
1 tsp vanilla extract
Optional: tiny dash of stevia powder.
Warm the coconut oil, sour cream and cream cheese in a mixing bowl to soften. I nuke, but putting your mixing bowl into hot water will work fine. Beat well. Add and beat in the remaining ingredients. Serve warm or cold on berries, pineapple or banana chunks. Keep chilled.
