So far I only put some in stir-fries. Need ideas!

I found this excellent recipe today - can't wait to try it.

I use it for salads all the time:
Green or Savoy - Red cabbage - Green Onion - Red Pepper - Cucumber - Blanched Asparagus
Dress with Coconut oil, Fish Sauce, Garlic, Ginger, Lime
    Or
Roasted in the oven with carrots and bacon ( 425 for 20 minutes)
    Or
Cabbage rolls stuffed with ground pork and cauliflower "rice". Topped with homemade roasted tomato sauce.

Cabbage casserole - season and brown meat of choice in big pot. Set aside. Add in chopped fresh cabbage and cook in pot until it softens. Transfer to casserole dish and put the meat overtop. Bake at 400 until the meat roasts through.

Variations - when the cabbage is almost done cooking on the stove top, add a chopped green apple. This is also delicious with red cabbage. A variation would also be to cover the red cabbage and apple mixture with chopped uncooked sweet potatoes and then bake it. The flavour combo is magical.

I saute it in a pan in some bacon fat or coconut oil. When it's just about done, I put in a splash or two of balsamic vinegar and let that boil off while stirring. That's it!

I like to saute it in butter with a handful of caraway seeds.

oh these are brilliant. Love the stuffed cabbage rolls idea. And caraway seeds, that's a spice I don't use much, must try it.

That sounds pretty good. I'll sauté it in bacon fat with mushrooms, next time I'll try the balsamic.

I threw this together last week and loved it:

pan fry a couple steaks, once they are done remove from pan and throw in sliced cabbage
fry in the steak grease for a few minutes
add about a cup of chicken broth
reduce till most of the liquid is evaporated and has created a sauce over the cabbage
    enjoy!

to me this smells and tastes like chow mein, without crunchy noodles. not sure how close it really is since I haven't had chinese food in over a year but its yummy.

I second the recommendation to make stuffed cabbage leaves covered in tomato sauce (galumpkis). I kinda used this recipe: Stuffed Cabbage Rolls (Galumpkis) Recipe : Tyler Florence : Food Network

I just used canned tomato sauce instead of using the recipe provided. And I did include the rice. 1.5 cups of cooked white rice is like ~70g of carbs. Split between the rolls, it's really not a lot if you can handle a little bit of starch.

One thing I will do differently next time is to boil the whole cabbage BEFORE peeling off the leaves. I think this will make them more pliable and easier to remove without tearing.
