Since you mentioned breakfast, I recommend Sarah Fragoso's book Everyday Paleo. She has some really nice non-coconut foods. She has totally turned me on to frittata, and my husband loves the egg cupcakes.
They both only take 30 mins to make, and are super easy to prepare ahead & warm up in the morning.
If you don't like it, don't eat it. What's the problem?
For snacks, try some jerky or some cured sausages instead? They keep well in room temperature and is easy to bring with you. Hard boiled eggs (or even scrambled eggs), sliced turkey/chicken, ham and cheese or some smoked salmon also work well. They keep at least a day in room temperature if kept in a sealed container.
If you're not bringing it with you (i.e. eating at home before you leave in the morning), just prepare something the day before, keep it in the fridge and eat it cold the next day.
