    Pecan Waffles

    Shop Now
    Makes 8 3.5" waffles

    3 eggs (2 separated)
    1 cup pecan meal
    1/3 cup Greek Yogurt
    1 tsp baking powder
    1/2 tsp baking soda
    pinch of salt

    Preheat waffle iron, greased with coconut oil.

    Separate 2 eggs, putting egg whites in a separate bowl. Mix until stiff, set aside.

    Mix egg yolks and all other ingredients in a separate bowl until smooth. Gently fold in beaten egg whites.

    Cook on hot waffle iron until golden and crispy.


    Optional: Banana Pecan Waffles - fold in 1/3 to 1/2 cup chunky mashed ripe banana into batter.

    Good idea. My friend and I have been brainstorming recipes for baked goods using alternative flours like almond. I never thought of pecan.

    i'm doing amazing, walking without a walker or cane after 10 days. Only need a walking stick on hills. Picking the right surgeon who does a truly minimally invasive hip replacement was the key. Went to Nashville for surgery by Dr. William Kurtz, well worth it!
