    What do you do with the left over oil?

    When I cook I tend have a nice collection of drippings from chicken, beef or port. I love using it as salad dressing. When cooking bacon I sometimes use the bacon oil to either fry up some plantains or sweet potatoes. Do you guys have any creative ideas or uses for your left over oil?

    I never get leftovers. I have a dog who "does the dishes".

    I usually make a pan sauce. Just add some water/broth/wine to deglaze, reduce, then add some cream/butter.

    Lightly saute garlic in the oil, then add fresh dandelion, bok choy or swiss chard. Saute until tender.

    I have to agree with yodiewan. And as long as it smells ok, I keep just about every fat I cook with, especially bacon fat, filter it through some cheesecloth and use it 4 or 5 times for eggs, sauteeing veggies and as a salad dressing like you said. It's fair to say that I'm addicted to bacon fat and pastured butter.

    Bacon grease makes a great caesar base. Just toss in 5 cloves chopped garlic and 3 anchovy fillets. Cook until it starts brown and transfer to your food processor. Add in the juice of half a lemon, a squirt of dijon and an egg yolk. Blend it up and taste- salt and pepper if needed. Best dressing in the world to top off roast cauliflower, cauliflower chorizo hash browns or a nice cabbage, spinach salad.
