So, we did a lot of damage to the Turkey yesterday; after a couple of visits to the carcass today--- it's ready for the soup pot.
I also threw in a few Lamb and Goat bones from the freezer... wow it really is smelling good in the kitchen now.
What are some of your favorite soup recipes for leftover Turkey?

Sounds like you have a great start! If it were me, I'd add chopped celery, carrots, lots of onion, chopped garlic, maybe a turnip (I love turnips!), and let it simmer a long time. At the end, I'd add lots of fresh Italian parsley and freshly ground pepper. Some Tabasco is always a good addition, YMMV.
