I cook a batch of meat and offal each week for my breakfast. When I cook liver, I just stir diced raw liver in with the cooked meat and let the liver cook in the remaining heat. Then I warm it in the microwave for breakfast. Never get tough liver that way and never had problems with it going off in the fridge
