    Banana, Coconut & Walnut 'Bread'

    Hello everybody,

    I tried the below recipe this week and it was so nice I had to share it with you. I've been storing it in an airtight container in the fridge and it has lasted five days - I had the last slice with my coffee this afternoon

    Here's what you will need:

    4 eggs
    
2 bananas (mashed)
    
60 g coconut oil (melted)
    
1 tbs honey (I used Manuka and probably a bit more than one tablespoon)

    1/2 tsp sea salt

    1/4 tsp bicarbonate of soda

    110 g coconut flour (I used Tiana)
    
Cinnamon (love cinnamon, so used quite a bit)
    Desiccated coconut - that was something I added which was not included in the recipe and it really worked well
    Chopped walnuts (I used a good handful)

    

I used a food processor and whisked the egg whites with the salt first, then added the rest of the ingredients, starting with the flour (make sure coconut oil is not too hot or it will cook the eggs!)

    Pour into a buttered loaf tin and sprinkle with coconut. Bake in a pre-heated oven (180 degrees C - 350 F) for about 40 mins. It will not rise, so don't use a big tin, or it will be completely flat
