    Dude Cookies

    I know, I know "she's baking again", but I swear it's been like a month since I made anything for my hubby or kid. I found a recipe online, and altered it. Vegan, Gluten, and Diabetic friendly!

    1 Tbsp butter, melted
    1 tbsp coconut oil, melted
    1/4 cup unsweetened, natural applesauce (a little single serving applesauce cup happens to be 1/4 cup!)
    1/4 cup chia seed
    1/2 cup hulled hemp seed
    1/2 cup ground flax meal
    1/4 cup stevia
    1 tsp sea salt
    1/2 tsp baking powder
    1/4 cup golden raisins
    cinnamon & nutmeg to taste

    mix all ingredients together, place individual servings on baking sheet with parchment paper, bake at 350 degrees, check after 10 mins to see if they're done. They will keep cooking a little after you take them out. Mine took 15 mins, and then firmed up after I took them out.

    I think Grace already ate 3! (and they just came out 10 mins ago, LOL)
    I had 1. Can't wait to share with hubby. They are REALLY good, if a little omega 3 heavy, but I can never remember if we're trying to avoid O3 or O6.

    Oh and where does the name come from? Well, when you tell your friends you eat hemp, they're going to possibly... uh... ASSUME things about you. So it made me think of when people get high and sometimes say "Dude".
    See if you don't give these cookies a little nod and a quiet "dude" these are good

    Wash it down with a glass of cold, homemade hemp milk or coconut milk!

    you are trying to avoing omega 6, not omega 3.

    1/4 cup of stevia!!??

    Here is the original recipe I found:

    3/4 cup whole wheat flour
    1/2 cup hulled hemp seed
    1/2 cup ground flax meal
    1/4 cup sugar
    1/2 tsp salt
    1/2 tsp baking powder
    1 handful each chopped hazelnuts and chocolate chips

    I think 1/4 cup stevia is better than 1/2c brown sugar & 1/4c regular sugar!

    Stevia is anywhere from 70-400 times sweeter than sugar, to replace it in a recipe for one cup, you only need 1.5- 2 Tablespoons of it. Did you actually put 1/4 cup in your recipe?

    I guess she's using a stevia that's not as concentrated as y'all do.

    To the OP: a brand and/or type of stevia would be helpful.

    I use stevia in the raw, cup for cup. Yes I know it has maltodextrin in it, but I got it before I went Primal, so have been using it so we can finish it off and get something else. Stevia's better than splenda, right?

    If you would like to suggest an alternative for future cooking, please do.

    hhhmmm.. some of my hippie friends would love these! Since I cut my dreads off, I think I'll pass (that looks like a LOT of fiber to me, and fiber and I don't get along well) but I might try these for my wedding, so the hippies will be happy.
