    Corn husk habanero sausage

    Corn husk habanero sausage

    2.5lb ground pork shoulder
    1 red bell pepper diced
    2 tbsp chopped garlic
    2 tsp kosher salt
    1/2tsp nutmeg
    1/2tsp ground habanero pepper
    1/4tsp allspice

    Combine all ingredients and mix thoroughly. Place in fridge over night. Soak corn husks to soften in warm water. Separate pork into 6oz servings. Lay 2 husks out flat, add pork mixture and roll. Twist and tie ends.

    Smoke for 2hrs at 250deg

    Mine are in the smoker now
