    Kimchee is fermented cabbage, with some spiciness added to the mix. I know that's a gross simplification of what it is, but that's as best as I would describe.

    It's a korean thing. It's fermented cabbage. It's goes really great with eggs and is a great probiotic. I never knew how great it was until I started reading Paleo books. No wonder I never get sick.
    Sadly I do not know how to make it myself. I know Korean people soak the bak choy in salt overnight. Then they add a mixture of red hot pepper, garlic, salted tiny little shrimp and some other stuff. Jar it and let it ferment. I buy mine at the local korean store.
    I bet you have a local korean store near by. It may not be a big supermart like we have here in Seattle, but even when we lived in Columbus OH, there was always a family owned korean store. But you can now get kimchee at wholefoods too.

    Warning- it's kinda stinky. Very garlicy and spicy and sour...can't explain it. I keep my jar tightly closed and in a zip lock bag for added protection.

    I have a feeling there are some nasty deficiencies in that list, so I probably wouldn't be thriving after a decade of eating nothing but that. But really, who WOULD be thriving mentally if they ate the same seven things for the rest of their life?

    Oh, I've just had a MUCH better idea:

    1. chicken (that covers muscle meat, liver, and eggs)
    2. beef (that covers butter, milk, cream, steak, ground beef)
    3. onions
    4. tomatoes
    5. raspberries
    6. chocolate
    7. broccoli

    Really makes the point that we'd probably do better getting the WHOLE food, even if that means a 500lb cow.
