Have my computer back ! It crashed Tuesday morning right when I was trying to finish up a print job ... thankfully it was still under warranty.
Meals on Wed. were basic, coffee, eggs. baked chicken @ dinner
B - coffee, boiled eggs, onions
D - romaine, onions, avocado
Coffee, scrambled eggs with fresh lemon thyme and onions. Love having these little herbs in the window, just waiting for me to pluck off a few and toss into a dish !
L - leftover baked chicken with fresh lime
Wondering what is up with all the limes ... I am adding fresh lime to pretty much everything I eat. It's not so much a craving, but more about how fresh and bright it makes the taste of foods. On a side note, my little Meyers lemon trees are covered with blooms and tiny little lemon starts ! Wooohooo !

D - will be a salad with ground, onions, avocado and lime

Hopefully my carnitas will be on a plate tonight, have them sitting happy in spices now, and about to head over to my Mom's to visit with her. Her 86th b'day is today. Son has the crock pot occupied with some of his foody things, so my carnitas won't go in to the oven until I get back here later. HAVE to get by the store and get more onions and limes !!!!
Waiting impatiently for the carnitas to get all crispy and yummified. Have onions chopped, limes are ready, romaine leaves just waiting to be filled .... I am starving.
Finally finally finally .... and as always well worth the wait. Amazing stuff, esp. for cheaper cuts of meat.

Finishing up a job this week that has demanding my attention and most of my sleep. Hasn't paid as much as I need, but it will get more connections for more work, so there you go.
Started the day with coffee and eggs, onions.
IF until early evening, followed by a salad of romaine, onions, a little ground, and an avocado.
More big muscle cramps again. Drank some diluted apple cider vinegar (organic with the mother) and cramping eased off pretty quick, a lot faster than the times I have resorted to calcium, potassium and magnesium tablets.
Ok, I know I posted yesterday, but it seems to have drifted away, caught in a vacuous dark hole in cyberspace. Sigh ...
So, day 78. Started the day with fresh eggs, just a few hours from the hens, black coffee and sliced onions. Made a cabbage salad for lunch/dinner .... basic shredded cabbage with a little grated carrot and onion, black pepper, drizzle of olive oil and lots of lime juice, had the salad with baked chicken. Three itsy bitsy "cutie" oranges. Debated about another cup of coffee, decided against it since my sleep of late has sucked big time.
Off to dreamland now ....
