    Quack question

    Primal Fuel
I have a freezer full of duck breasts and no idea what to do with them. I've read to soak them overnight in salt water to rid them of their gaminess, then what? I love me some bacon-wrapped smoke duckies, but I don't have a smoker. What other delicious ideas can you come up with?

For me, duck breast is actually too dry. I personally buy whole ducks and use the skin fat to cook the meat. In your case, I'd recommend stir frying with plenty of coconut oil OR frying up some bacon then stir-frying the duck breasts in the bacon fat.

Mmmmmm...bacon. Thanks, Nance! I love duck fat, too, but my husband's friend offered us some breasts, and we weren't about to say no to free clean meat!

Oh, man, that sounds GOOD. I'm scared to try it :/ Since it's supposed to be 90F here on Mon & Tues, do you think hanging it in the fridge would work?

I've tried it and yes it works in the fridge It is pretty delicious. But do make sure you cut off the tenderloin from the breast, I didn't and I think it interfered a bit with the curing.
