    Paleo Chicken Soup

    Anyone got a good idea about what to put in it?

    I have made vegetable broth and plan on using roasted chicken obviously. However, I am not sure what else to put in it. I was thinking about carrots and celery but I am lost other than that.

    Does anyone have any good paleo chicken soup recipes or ideas with what vegetables/seasonings to put in it?

    Add coconut milk, curry paste, mushrooms, peppers, water chestnuts, bok choy, etc. for Thai coconut soup?

    For more standard chicken soup, add onions, garlic, carrots, celery, kale (or other sturdy leafy green), mushrooms...

    For seasoning I like thyme and a bit of lemon or orange peel.

    Diced tomatoes, onions, poblano peppers, maybe some chili/Mexican spice

    I like to make it italian style with olive oil, garlic & greens. Cook the chicken in olive oil with a lot of garlic & some onions. Add carrots, celery and chicken broth, cook till the vegetables are soft. Add in big handfuls of kale cut in strips like noodles, cook till the kale is tender. If you do dairy, top with a bit of parmesan.

    Yum. My version. It is specifically for colds (Thai penicillin) but good any time.

    Or you could make this version which is basically the same premise with onions, cabbage, carrots and cilantro instead......

    I usually include whatever's in my fridge, but my regular chicken soup combo involves at least leeks, carrots, mushrooms, zucchini and (right before the end) wombok in a good quality stock. Yum.

    And yes to a touch of curry paste/coconut milk to spice it up for an alternative - always good.
