Easy chicken parmesan « peace – love – nature
I forgot about this recipe, but last week I made it for my mom after she had angioplasty. My parents now face the arduous task of learning how to eat healthily after years of eating no one's version of it.
I don't think I'll ever convince them that primal is the way to go, but this seemed like a nice compromise. Might be a good meal to feed your guests who are afraid to eat all the yummy fat that we do.![]()

Looks amazing, I really miss the standard chicken parm over pasta so this is a good compromise.
Thanks Sarah! Will be trying that soon.
*Drool* this has been on my list forever, as I never cared for the breaded version. I have got to try this out!

I thought of this last night - some of the cheese falls off the chicken when you're cooking it on the stove. No big deal - the sauce covers up any imperfections of the "breading".![]()
