Lazy Stuffed Peppers page

So we're supposed to have stuffed bell peppers tonight, but I is feeling LAAAAZY. Any suggestions on how to simplify the recipe? I'm thinking of dicing the peppers and cooking with sausage, but that doesn't seem like "enough", kwim?

Found lazy recipe for dinner-- let hubbins cook. I'm so blessed to have a husband that enjoys cooking, and doesn't mind doing it from time to time.

I make stuffed peppers by stuffing peppers with browned ground beef and cauliflower rice and then cooking them in tomato juice. When I'm feeling lazy (and I want it to cook faster) I just brown beef and onions and just dump in chopped peppers, chopped/riced cauliflower and tomato sauce. Voila.
