I'll probably catch crap for this, but...
Chocolate chip cookie dough cheesecake! It's chilling in my fridge right now.
The "cookie dough" is made with a blend of white rice flour, tapioca starch and sorghum flour with an organic coconut sugar/stevia blend and a crapload of butter. The cheesecake part is cream cheese whipped with eggs, vanilla, a little kefir for a "tang" and more coconut sugar/stevia. I hope the "cookie dough" part turns out okay. Since the cookie dough's on the bottom, I put the dough in the springform pan first and froze it for 4 hours before I topped it with the cheesecake mixture and baked it. I'm hoping freezing it delayed the cooking process so the dough didn't completely bake. We'll see how it turns out...
