    Ladies and gentlemen, I give you the ultimate post-workout cake.





    This cake is very heavy on high GI carbohydrate, moderate on protein and nearly fat free. It turned out so moist and delicious, you'd never know there isn't a drop of oil in it. Due to the incorporation of fat free cream cheese and a single tablespoon of peanut butter in the frosting it may not be perfectly primal, but the peanut butter can easily be replaced with almond butter. The fat free cream cheese would be hard to replace, but you could probably drain some Greek yogurt with a strainer and cheesecloth, whip it with a little tapioca starch or cottage cheese to thicken it and sub that in if you had the time.

    Anyway, onto the details:

    Dry ingredients:

    1 1/4 cup white rice flour
    1/2 cup tapioca starch
    1/2 unsweetened cocoa powder
    2 tsp baking soda
    1 tsp baking powder
    1 tablespoon stevia powder

    Wet ingredients:

    3 extra large egg whites
    1 cup unsweetened applesauce
    1 cup lowfat, organic grass-fed buttermilk
    1 tablespoon vanilla extract

    Combine dry ingredients in one bowl. Mix wet ingredients in another bowl. Slowly beat the dry ingredients into the wet ingredients until a batter is formed. Separate in half evenly.

    Pour batter into two 9" baking pans sprayed with olive oil only non-stick spray. Bake at 350*F for 20-22 minutes or until a knife inserted into the center comes out clean. Allow to cool.

    Frosting:

    8 oz fat free cream cheese
    1 cup organic goat's milk yogurt/fat free Greek yogurt
    1 tsp stevia powder
    1 tablespoon vanilla extract
    1 tablespoon organic peanut butter (or any nut butter if you choose)


    Apply icing to cooled cake. It was, literally, a piece of cake

    My next goal is to perfect the brownie cheesecake. My last attempt was much better than my first, but I still have a bit of work to do to get the cooking times down and fine-tune the batters.

    Bro, I finally made the coconut-almond-flax bread and it is honestly the best bread I ever had, and healthiest. Going to add some fruit next time. Just curious but was is the purpose of the heavy cream and apple cider vinegar?

    hey choco whats ur take on wonder cocoa. its 0% fat unsweetened cocoa powder. using reg cocoa its kinda fatty per tbs specially using a 1/2 cup thats about 7g? less fat u gotta worry about. i know its not much but still.

    The more I read about flax meal, the more I don't want to cook with it often. Not that I would bake a loaf of that every day, but do you think I could take out the flax meal and add more coconut meal, or does the flax give the bread it's structure?

    Looking back, yes, I agree with not cooking flax. Heated flax is essentially varnish. I would now replace the flax meal with sorghum, buckwheat or half and half. It would make the bread considerably "carbier", but it would lend a similar flavor. If you don't want the carbs, then yes, I'd sub in more coconut flour. Another option would be shredded coconut or grated zucchini, but you'd have to play around with the proportions. I'm glad you liked it, though!

    ive been using nori as wraps lately 3g carbs per sheet and some nice iodine to boot.
