I think next time I'm going to bake an almond meal crust - a cup of almond meal and half a stick of melted butter, press into a pan and baked til golden brown. Then, I'll crumble the crust into the ice cream kind of like chunks of graham cracker. That could be really good.
Oh, don't forget the chocolate sauce. So easy.
Heat 1 1/4 cups of water on the stove. While the water heats up, add 1 cup of Hershey's Special Dark cocoa powder and whisk until it begins to simmer. Simmer, whisking the whole time, until desired thickness. It only takes a few minutes. You have to whisk the whole time or you'll have burnt chocolate stuck to the bottom of the pot. After thickened, remove from heat and add stevia to taste. Stevia gets far sweeter as the mixture cools, so DO NOT make it taste sweet while hot or it'll be sickening when fully chilled. I usually add stevia until I can just detect a hint of sweetness and when it's chilled it's perfect. The last jar I made (last night) I added 1 tablespoon of coconut oil and 1 tablespoon vanilla extract just for flavor.
