My kid is a big-time cardboard (eggo) waffle eater. I might just have to give these a shot tomorrow morning to see if she'll eat them.
I would put these up against any grain made waffles for taste. I just threw this together this morning.

So I made these waffles this morning. Quite tasty but I think I'll cut the amount of coconut flour in half next time. I found them a bit too dense. And I need to grind my flax meal down more because it's a bit gritty. But, with butter, a few slices of banana, and some defrosted berries on top, pretty damned yummy and very filling.

Your blog made me laugh (in a good way). That's how I grew up, climbing trees, having adventures, and going where I wanted. I never broke my arm climbing trees, and neither did any of the other boys. We built tree forts, went skinny dipping at midnight without parental supervision, and generally got in trouble fairly often. I'm not sure how we all lived through it, and maybe we should have had *some* supervision, but I would not trade it for the modern childhood in a bubble.
Pancakes- yes, but make it thinner with less coconut flour.
Bookstorecowboy- yes, I hate the modern bubble kids are parented in. I even *gasp* let my older two kids run around with their friends, with no shoes or cell phones, all afternoon all summer!
