It just so happens I was looking at an onion jam recipe [http://beekman1802.com/food-and-wine...nion-jam.html]
I bet if you fried up some bacon and then made onion jam (sans maple syrup) on top of it you'd get bacon jam!

Skillet comes to my work once in while. I bought their deal $1 for $10's worth. But the last time I had their grassfed burger, I skipped the bacon jam because I thought it was a sweet jam. But I'm definitely going to have to try it now.
