    mashed cauliflower with frozen cauili?

    Has anyone successfully made mashed cauliflower with frozen cauliflower? I've tried a half dozen time and I always end up with super chunky texture, and really crappy taste. Is this at all possible? I like to make a little at a time, since it's only me eating it, and only on rare occasions, and I've so many heads of it go bad sitting in the fridge.

    What are your tips? I know it's a common recipe and there are pages and threads dedicated to it, but they all seem to call for fresh, and it would be so much more convenient to use frozen.

    Next time I might just stick to rice. :/ I just love mashed potatoes, and I wish I could get my fix....

    i do pretty well with frozen i steam it til it's super soft and crumbly then process it with cream cheese, then, you know, salt pepper butter and sour cream

    I always do it with frozen... cook it really well then puree with butter, salt, and pepper

    Maybe I'm just not cooking it long enough. It doesn't seem to want to "process", it just looks like chopped up cauliflower, which would be fine for rice, but I'm looking for creamy mashed potato consistency.

    Steam the bejeebers out of it, drain well, toss in food processor with sour cream & garlic. VOILA!

    Yeah, you have to steam it longer. I cook mine in the microwave for 8 minutes. Have never had an issue with consistency. I do find that if I try to make more than one batch at a time, it doesn't process as well.
