    Rum Raisin Ice Cream--not for the faint-hearted! Won't freeze hard!

    Primal Fuel
    My beloved requested ice cream, so using my GF cream I made the following, tweeking an old favorite recipe of Fran McDonough's.
    This ice cream will be a bit softer when frozen, and will not get hard when stored in freezer because of the alcohol. If you heat the alcohol you lose this property.

    Rum Raisin Ice Cream
    @6 - 1/2 c servings

    1.5c cream
    7 eggs
    1/8 tsp Stevita Stevia Sweetener
    1T Splenda (opt, can use more stevia)
    1/4 cup dark Rum
    2 tbsp Raisins
    1 tsp Pure Vanilla Extract
    1/5 tsp Salt
    1/2c water
    (opt) 1 tsp rum extract


    Directions
    Separate room temperature eggs. In blender mix raisins with 1/2 c water and pulse to break up the raisins. Beat yolks with stevia, and the raisins & water, add 1/2 c of the cream. Heat on stove gently or in microwave just to hot but not boiling. Add vanilla and allow to cool in refrigerator.

    Beat egg whites until just soft peaks, add dash of salt, splenda, cooled egg yolk mixture, and remaining 1 cup cream; lastly, add rum (and 1tsp of rum flavoring if you don't have dark rum or want more intense rum flavor--can use other spirits like vodka or calvados).

    Pour into ice cream freezer, and follow your freezer directions.

    This ice cream will be a bit softer when frozen, and will not get hard when stored in freezer because of the alcohol. If you heat the alcohol you lose this property.

    Duuude, that looks delicious. I got an ice cream maker recently and have been using it to make sugar-fee/ lower-sugar ice cream for my wife and myself. I don't think I've ever had rum raisin ice cream, but I've always wanted to try it. It just sounds like it'd be right up my alley. I don't think the wife would like it with the raisins, but maybe I could make a smaller batch just for me!

    I forgot to add that I add an ounce of gin/vodka to all my ice cream recipes to keep the batch from turning rock hard when stored in the freezer; you won't taste it. And, in a whole batch it amounts to a minute amount of alcohol per serving, so even my grandkids eat it.

    Actually, if you take out the rum and raisins, you have a basic french vanilla recipe to which you can add anything and adjust your sweetener. My grandkids say the vanilla is the best they've eaten, which is high praise to me.

    Belinda: Since it is mainly eggs and cream, the half-cup serving is very satisfying. But I do keep in the garage freezer so it isn't too handy.

    I prefer liquid stevia. Also, I decided to leave out the water next time and just use some of the cream to chop up the raisins.
