Primal-ish treats will only give you cravings for the real thing, and since you said you were getting over carb cravings, why go there?
OK I haven't made this yet but this is what I'm thinking:
Use this for the crust:
-3 cups almond flour --> 3 cups ground almonds
-2 tablespoons sugar (stevia instead)
-1/2 teaspoon salt
-1/4 teaspoon baking soda
-4 tablespoons cold unsalted butter
-one large, beaten egg

And this for the filling:
-2 (8 ounce) packages cream cheese
-3/4 cups white sugar --> use stevia/honey mix instead? maybe baking powder stevia for a better texture
-1/4 cup milk --> don't have any almond milk or coconut milk on hand, what do you think? go for whole milk? buy coconut milk and use half the quantity?
-2 eggs
-1/2 cup sour cream --> using 1 cup full fat plain yogurt instead
-1/2 tablespoon vanilla extract
-1/8 cup all-purpose flour --> using 1/8 cup of ground almonds instead (will this ruin the texture? I never use the really fine almond flour, always home-ground almonds)

TOTAL: 28g carbs, 245g fat, 86g protein
Filling:
-2 4oz boxes of cream cheese = 32g carbs, 150g fat, 30g protein
-2 eggs = 1g carb, 14g fat, 12g protein
-1/4 cup skim milk = 3g carbs, 0g fat, 2g protein
-Vanilla = ?
-No flour, added leftover ground almonds from crust
-1/2 cup plain yogurt = 8g carbs, 2g fat, 6g protein
-1/4 cup stevia for baking = ?
-1/2 tbsp honey = 8g carbs, 0g fat, 0g protein
TOTAL: 52g carbs, 165g fat, 50g protein
GRAND TOTAL: 80g carbs, 410g fat, 136g protein
Calories: 320 (carbs) + 3,700 (fat) + 545 (protein) = 4,500 calories total
About 20 small servings
Each slice: 230 calories, 4g carbs, 20g fat, 7g protein

Really? I like almond pancakes better than real pancakes now. And I hate real banana bread now that I've perfected my own almond banana bread. This isn't only for me - I start exams tomorrow and my friends love to eat my baking. Plus I want to make the perfect primalish cheesecake by the time I'm married with kids. hehe
it's more about the baking than eating it afterwards. I don't think I'll have any today, maybe a few bites tomorrow!!
What do you think baking wise?
My problem would be that I love cheesecake ... and things that taste like almonds ... so I'd probably eat the whole thing!

I am. Once again - this is for a large group of very hungry teenagers! I will have a few bites to see how good it is
I just popped it in the oven. So excited!
OH MY GOD! It turned out GREAT! The top was golden-ish - not like a cheesecake is meant to look, but the crust and the filling had the PERFECT consistency. I turned the oven off after 30 mins instead of 1 hour and left it in there for 2 hours. I had a slice and it was good except had a slightly bitter aftertaste from the stevia. Added a tiny bit of jam and it tasted GREAT. WOuld've been even better with strawberries...yum!
