Hehe, yeah, i used pork rinds as "tempura" in a home made California roll with crab claw meat and it was delish, and I also used them with coconut flour to bread calves liver and i while it turned out pretty good I really just like chicken liver best.
I eat them when DH is eating doritos ... but why don't they have fake 'zesty cheese' flavoured pork rinds? Hmm... maybe because I'd eat the whole bag!!!

My mother-in-law gave me pork rinds in my Easter basket. I had never had them before, but I think I've found my new favorite snack.

I just use them to dip stuff for the most part. Salsa, guacamole, egg salad, tuna salad, "hummus" made from cashews.
I have used them as breadcrumbs and that's good too.

That's all I've ever heard of doing with them. =]
Buy. They sell them in the Latin American food aisle at my grocery store, the Goya brand. I'm pretty sure those are literally the only ones available in my city. A large part of our population is vegan hippie health nuts and CW skinny college chicks, who would flip out at the very mention of pork rinds. =]
