    Pancakes Got Screwed!

So I was hungry. It's the last day of Whole 30. I was really tempted to make super nog. I started whipping egg whites, but that's as far as super nog got. I thought "hey, let's make some crepes!" I added cinnamon, vanilla, and nutmeg, and threw the frothy egg whites on the griddle. I started turning them out on the plate and smacking my lips, wishing I could have some syrup. Then I thought "hey, I've got coconut cream!" So I started putting that on. It got all melty and delicious. Then I was inspired to grab blackberries from the fridge. I folded a crepe with blackberries and coconut cream.

OHMIGOSH, PANCAKES JUST GOT SCREWED BY CREPE FANTASTICKNESS!

Just wanted to share my super yummy W30 compliant (I think? Do crepes break the no 'stuffing your old life into your new one' rule?) breakfast.

LOL!!! I make the same thing practically but use almond butter and hwc. If you don't add the vanilla cinnamon & nutmeg, they work well for savory fillings. I use them for enchiladas and making manicotti.

What did you use as your flour? Would you share the recipe?

I didn't use flour. It was an egg white crepe. Whip up egg whites until frothy, then cook em up on griddle. They're suprisingly sturdy

is coconut cream the same thing as coconut milk (just the solid part)?
    I'm a quitter...but I'm back now.
