So, I was looking for a way to make simple noodles.
It then dawned on me. eggs.
I took several eggs, beat them well together, seasoned them and poured them onto a well greased cookie sheet.
Baked them in the oven until set. I rolled the finished product up and sliced thin like a fettucine. They held up great in a really chunky sauce I made!! Not exactly like pasta...but a heck of a lot closer than spaghetti squash's texture.

Any advice on how many eggs per person-sized serving?
I think mine ended up being 3 eggs... But my "pasta" dish also had some beef, lots of veggies and a sauce. So, the "noodles" were just incorporated in, not the main event.

Did you add any HWC to the eggs and what kind of seasonings did you do? I MUST KNOW!!!!! Would be great for chicken and broccoli fettucini.
