I love black bean noodles, but they're still an occasional treat. I like them with olive oil, a little vinegar, some sun-dried tomatoes (the kind packed in oil- even better homemade), and some crumbled cotija cheese on top. It's pretty darn yummy.

Not to hijack, but I actually just found sweet potato noodles! I think they're Korean, often used in a dish called japchae. I'm really thinking of trying them, but I want to make sure that there's not something nasty in them first. They're called the following: dang myun, dangmyun, tang myun, or tangmyun. I'm thinking of asking The Perfect Health Diet-writers about their opinion on it.

Ooooooh! I've had that in restaurants and it is delicious with some chicken and sesame oil! Aaaaand Amazon has one whose sole ingredient is sweet potato starch. Bingo! Thanks a lot for the idea, I never would have thought of this on my own.
