    Cinco De Mayo Inspired Meals

    So Cinco De Mayo is coming up, and was just wondering if anyone had CDM inspired meal/recipes? I thought it would be fun to celebrate the day Paleo/PB style

    You can take the marinade for meat and use it for chicken or steak and grill the meat for salads.

    I'll be making Carne Asada with roasted veggies, nopalitos, and margaritas.

    Nopalitos is a family favorite... this is how I make it (sorry, I don't measure) :

    Cactus (nopales) diced
    Add diced avocados, tomatoes, jalapeņos, onions, and chopped cilantro
    Lime juice & salt to taste
    Mix together and top with crumbly Mexican cheese (I like Supremo Queso Enchilado or Queso Fresco)

    Trish, I looked everywhere on their site and could not find it! Welcome to Theo Chocolate I bought it in the store...it may have been limited ed. You may be able to email them and ask about it.
    I really love the spicy.

    If I do something it will be something like grilled steak, onions, and bell peppers (fajita without the tortilla) with guacamole and pork rinds. Of course, the meal wouldn't be complete without margaritas on the side!
