    YUM! Made cupcakes for my birthday this weekend, and here is the recipe:

    1/2 Cup Coconut oil
    1 Cup Coconut Flour
    1/2 Cup sugar (you can sub any sweetener you like, or omit. I was making for also-non primal people, so they were sweeter than my tastes, I don't think it needs it.)
    4 Eggs
    1 Pint mashed bananas (about two large. make sure they're good and ripe)
    2/3 Cup Unsweetened cocoa powder
    1 Tablespoon baking powder
    1/2 Cup buttermilk (you can use coconut milk if you want)
    1/2 tsp salt
    1/2 tablespoon vanilla
    1/2 bag of dark chocolate chips

    beat eggs, sugar, warmed coconut oil, and banana together until light and fluffy. Really mix it well, because the more air you get into this, the fluffier the cupcakes will be. Add buttermilk and vanilla and continue whipping. In a separate bowl, mix coconut flour, cocoa powder, baking powder, salt, and chocolate chips. Add dry ingredients to wet. Mix but don't overmix. Just get everything moist. Scoop into cupcake tins, and bake at 350* for about a half an hour.

    For frostings:

    1 Package warmed cream cheese
    1/2 cup melted dark chocolate chips
    2 tablespoons warmed coconut oil
    1/2 cup shredded coconut
    2 Tablespoons sugar if everyone around you whines that it's too bitter. wimps.

    mix well, then cool to room temperature. don't cool this in the fridge. It sets up to a ganache, and you will never be able to spread it. Pipe onto cupcakes when the cupcakes are cool.

    Eat while going "OMNOMNOMNOM"
