    breakfast when eggs are out

    hiya all,

    i was hoping you'd have some suggestions for breakfast ideas when someone can't eat egg yolks. the whites are fine, but the yolks give me a horrible stomachache. i know that most of the nutrition is in the yolk so i'm hesitant to just have the whites. i've also tried duck eggs and had the same problem.

    i can eat whole eggs IN things (as in, if i were to make bread or cake or something). that doesn't bother my stomach.

    i'm trying to keep the fruit to a minimum as i have early diabetes. i still eat fruit, but not everyday.

    any suggestions?

    I really, really limit eggs and dairy - at first breakfast was a challenge for me. I frequently fast through breakfast now, but on days I am hungry I make burger patties with mustard and eat them in lettuce wraps, fried up a quick pork chop with some broccoli slaw, make a minute steak with frozen veggies. I also sometimes heat frozen peas and add a can of good quality tuna, olive oil, lemon, and cumin. Today I had beef and marrow stew with sweet potato.

    Once in a blue moon I will have a coconut milk smoothie with blueberries, mango, and a splash of oj. Or I will make a primal pancake with a mashed banana, one egg, melted butter, and almond flour, eaten with nut butter or butter and a touch of honey.

    Once you can get out of the idea that breakfast should consist of certain "breakfast" foods, the door is wide open!

    I think baked custard right out of the oven makes a wonderful hot breakfast. Leftovers are great (I recently had a yummy sweet potato corned beef hash), and of course a big bowl of IF

    This AM.....large slab of hard cheese 1/2 can Corned beef, four strawberrys and creamed coffee lol.........

    If you're stuck in the mind set of what Americans typically have for breakfast there's tons of options. In Vietnam they typically have spicy soup for breakfast.

    Try making your own chorizo. Mix 1 part ground beef and 1 part ground pork with pureed chipotles, apple cider vinegar or lemon juice, paprika, cumin, oregano, salt & pepper, and let this sit in the fridge overnight.

    Fry it up with some sweet potato chunks, and you won't be missing the eggs.

    Paleonola = chopped nuts, shredded coconut, dried/fresh fruit, milk of choice

    Primal Hot Cereal = 1 c. nuts, 1/2 banana, 1/4 c. coconut milk, dash of both salt and cinnamon, whirl in food processor, heat in microwave for 1 minute. Serves 2.

    Almond or coconut flour pancakes and waffles. Leftovers from the night before. A plate of bacon and/or sausage.

    I'm pretty tired of eggs frequently, and I find they don't fill me up that well anyway without significant amounts of bacon or sausage. So I feel fine skipping breakfast too. But yeah, it's mostly a psychological hang-up, and if you can get over the "correctness" of whatever you're eating, you'll do fine.

    Leftover dinner reheated. For some reason roasted veggies are especially good in the morning.

    lots of great ideas here. keep them coming, guys. they are very helpful. i've been relying a lot on meat and greens in the morning. we have an amazing natural food store that makes its own sausages. i've been eating those with a bunch of lettuce and oil and vinegar in the morning. but, i'm getting so bored eating the same things. it's always good to have other options. i'm still doing dairy, so sometimes i'll have cottage cheese and berries. i actually made myself an egg heavy sugar free cheesecake the other day and had it with berries for breakfast. that was so incredibly yummy, but not for everyday, of course.

    i so love eggs and thought i was doing well on them (been eating them for months). i didn't realize that i'd just become accustomed to the stomachache until i stopped for a few days. ouchie.
