    I have been thinking that opening a Primal/Paleo food cart here in Portland, where the food cart scene is HUGE, might be a good idea. Getting a food cart started requires minimal capital -- several thou and a dream. These days, I'm much more interested in setting up passive income streams, so someone else can do it; feel free to take the idea and run with it.

    Location would be critical (and all the good locations have already been snatched up), and there'd have to be a draw-in somehow for all the tons of vegans around here. Maybe gluten-free baked goods, coconut milk smoothies? Also marketing it as low-carb would draw that whole crowd in, too.

    How about in SoCal?

    I think that a Primal Cafe/Eatery would do well in SoCal. I've lived in Pasadena, Santa Monica, and Orange County, and there are so many people in each of those cities who are very health conscious. There are raw food restaurants in these areas that have been around for a few years so I don't see why a Primal Cafe couldn't be even more successful. Raw food doesn't taste very good and it's pretty expensive - I think Primal caters to a much wider market.

    I have no experience in the restaurant industry, but I know others who are passionate about the idea and I have some funds, so if there's someone out there who is interested in kicking around some ideas, please let me know!

    I can predict that it wouldn't go over that well in Indiana. Olive Garden is packed 24/7 around here...

    Actually, I'm being snobby. There are a few very good resturants that focus on local, seasonal, and fresh in Indy. Thy're not paleo, but anyplace that prioritizes whole food is 98% there.

    I have my business plan all written up. I am a restaurant manager already, got the marketing courses, amazing at hiring the right staff and training them (so say my boss and my customers) and also am a damn good cook with a talent for making up new recipes. All I need if for a few of you fine people to be my silent financial backers

    Sadly with out the cash start up to go independent I will have to stay with the corporately run company with the reliable paycheque and health benefits and surrounded by white flour and sugar.

    Great to see all this discussion about about primal/paleo places! We are psyched to be the only strict primal cafe/snack bar in the city and though not selling anything with grains or processed sugar has limited our profitability in some ways, we have manged to really stand out from the competition and create a great brand based on strong values. So if opening up something is something you wanna do, i say go for it!! On a side note, we are currently branching out into creating easy to follow franchise options for interested entrepreneurs who may want to own their very own Primal Grind in their respective cities.
