    Sweet Potato Chips BOOYAH!

    So I made sweet potato chips. I bought 2 sweet potatoes and used a peeler to get one all the way down. I fried it in coconut oil, then took them out and patted dry, and seasoned. They were still really soggy so I threw them in the oven. They crisped up a little, but not nearly where I wanted. Tips?

    Anyway, HOLY FREAKING HANNAH & HAIL MARY! Just in the coconut oil they were fan-freaking-tastic. I don't think I can ever eat a regular potato again. These ones were white, however, not orange like I was expecting. Did I get the right ones?

    I totally know what I'm having for breakfast (sweet potato hash, sauerkraut, and corned beef), but why did no one warn me how fantastically delicious sweet potatoes in coconut oil would be?

    What would happen if I sliced up banana in coconut oil?

    How do I get it crispy?

    Also, sweet taters and coconut oil is indeed a great match up. Especially with purple sweet potatoes. I seriously love that combination.

    Hubby suggested baking them first to dry them out, and then frying them (maybe re-baking). What think?

    I just did this on Sunday and used the chips to dip into my egg yolks. Heaven!

    (I'm not sure if I had a yam or a sweet potato, but if I closed my eyes and tilted my head just right it was reminiscent of toast.)

    I just fried 'em up on the stove in CO. I cut them really thin, and I intentionally let them get a bit too brown. Crispy as a Lay's potato chip.

    Must have been beginner's luck, because before Primal I was burning water and exploding eggs, and this was the first time I tried it. Now I'm concerned that I won't be able to replicate it again.

    Let's see: I used a long, skinny sweet potato (or yam? -- not sure -- what's the difference? it was not orange), sliced very thin, put in a LOT of CO into a stainless steel skillet on a heat of 6. As I said above, I intentionally overcooked them a bit because I wanted crispy. Some I couldn't get out quite in time and burned. Of course, I ate them anyway. They tasted like and had the texture of burnt toast.

    Hope that helps? Maybe it worked because I had sooo much CO that the chips were swimming in it when frying?

    oh gawd, these are hard assuming you mean like chips as in crisps, not big thick chunky ones? I've tried several times and given up. I used the food processor to slice thinly, but a mandolin woudl be better. I tossed them in some olive oil (not a fan of coconut oil I'm afraid) and then spread out on baking paper and put in the oven on a high heat. Had to watch them closely as they burn quick. Just toooooo much effort for very little return I'm sorry to say. Some crispy, some not.

    However, my partner made some fries last night. He sliced them into chip size, soaked them, rinsed, parboiled and then tossed in olive oil and rosemary and put in the oven to bake. They were yum... not very crispy but to be honest that didnt worry me at all... perhaps a 2nd baking might have crisped the outside.

    I use 2-3 of the orange variety, peel cut in half and then cut in long thin strips. I toss them with olive or coconut oil ( a couple Tbsp) and then toss with a mix of 1 tsp chili powder, 1 tsp paprika, 1 tsp garlic powder, 1 tsp sea salt and 1/2 tsp cumin. Bake at 425 for about 15 mins per side. They are delicious and my kids love them!
