If the chicken doesn't smell bad, is within the expiration date, and any part that's been exposed to air doesn't look significantly different than the rest, I'd say it's fine. The heat from cooking should destroy any bacteria.
OTOH, if it's waited at room temperature for any longer than 2 hours, toss it. I had food poisoning from a chicken dish at a potluck that had waited out for too long and it was one of the most miserable days of my life.
