    Need substitute veggie suggestions for Shepherd's Pie filling

    Primal Fuel
    I'm so excited to make one of my favorite meals - found a great Shepherd's Pie recipe on the awesome blog of a member here, but don't want to put carrots or peas in it.

    I already plan on filling that sucker full of mushrooms, but what else can I toss in there? Any ideas would be greatly appreciated! Thanks in advance.

    green beans & mashed cauliflower (steam cauliflower till super soft, drain, mash with sour cream & garlic), top with cheddar and paprika.

    Swiss chard, red/green peppers, artichoke hearts, sun-dried tomatoe, brocolli, cabbage, sourkraut (I've been putting it in all kinds of things lately and it's surprisingly versatile)

    Yeah, that's the beauty of Shepherd's Pie. It was pretty much whatever was available in the field at the time. Use whatever tickles your fancy

    oh! Forgot to add; squash - butternut or delicata should both work well, and if you have a TJ's nearby they have already peeled, cubed butternut squash.

    Thanks much! Trying to watch the starchier stuff, but I sure wish I didn't have to! I'm pretty sensitive to sugar swings.

    Guess I'm a grumpy old codger. To me a "shepard's pie" with non-traditional ingredients is a casserole, perhaps a very good casserole. IMHO, a shepard's pie ought to have lamb (or mutton). Since I don't eat that, I make "cottage pie" (beef).

    I will actually be making a cottage pie, just planning to sub out the starchier veggies with less starchy ones. A good shepherd's pie is to die for!
