    Coconut Vanilla Pudding

    So I was in the process of making myself a breakfast smoothie (coconut milk + fruit & eggs is ok on Whole 30, right? I hope so, or I'm screwed, obviously), and noticed that 3 eggs whipped with 2/3 cup coconut milk looked an awful lot like vanilla jello instant pudding. Would anyone out there be willing to try it out with some vanilla and/or stevia & lmk how it is?

    3 eggs
    2/3 cup coconut milk (I used thai kitchen)
    vanilla
    stevia
    (vanilla cream stevia would probably work well too)

    I will try it! I am on a liquid/soft food diet at the moment and am looking for tasty things to eat, this looks great! I might refrigerate for a while after I make it so that it will be thicker like pudding.

    how much stevia? too much makes it bitter to me.

    I have the same problem. It tastes like alcohol to me if I put too much in. If you have vanilla cream stevia, do no more than 5 drops. Use is sparingly, only to suit one's tastes.

    Last time I used stevia, I used half of a packet. That was more than enough.

    I'm really interested to see how I react to stevia after Whole 30. You know you're making progress when corned beef fat tastes like a candy bar!
