My Breakfast - Yummers!!!
Almond flour pancake - whisk together 1 large egg, 1 packet stevia, 1 T sparkling or plain water, sprinkle of cinnamon, and 1/4 cup packed almond flour. Pour into small pan coated with coconut oil over medium/medium high heat. Flip when bottom is golden. When other side is cooked, place on plate and immediately top with a little butter ( or a lot ) Sprinkle with a generous amount of cinnamon and now it is ready to enjoy. I usually have a couple pieces of bacon on the side. My non paleo hubby loves this. He is used to syrup, but I top his with about half of a small mashed ripe banana for sweetness.
