A Jaime Oliver balsamic bacon dressing.
I don't know exact proportions, but last night he cooked up thin bacon strips in a lot of olive oil til the bacon was crispy. Then he sizzled up some fresh garlic in the pan drippings, added more olive oil and some balsamic vinegar, crumbled the bacon and tossed it all with salad greens. Looked fabulous!

That sounds amazing! Think I'm gonna have to try and find that on youtube, or at least try to recreate it from your description. With the warmer weather, I'm getting all salad keen again

try adding a little dijon mustard into that, pour over spinach leaves and hard boiled eggs..... super yum.
