    Help Primalizing: Autumn Latkes

    Primal Blueprint Expert Certification
    Alright, so when I was vegan (yeah, I know) the BEST recipe I ever found was in Veganomicon: Autumn Latkes.

    Here is the recipe:
    2 cups peeled, shredded beets (about 3 beets)
    1 cup peeled, shredded carrot (1 large carrot)
    1 cup peeled, shredded sweet potato (1 medium)
    1 shallot, finely chopped
    1/2 cup AP flour
    1/4 cup cornstarch
    1/2 tsp salt
    freshly ground black pepper
    1 tsp fennel seeds, chopped
    1/4 cup water
    olive oil for pan frying

    So you just combine all the veggies and then add the rest of the ingredients. Fry in 1/2 inch olive oil in a pan over med heat until crispy yummy.


    That fennel mixed with those root veggies = funkin delicious. I could eat 100 of them in one sitting because I can't get enough (you will have red pee the next day if you do this). The only non-primal stuff I can see is the flour and cornstarch. Obviously binders. Arrowroot for cornstarch, yes? I can definitely pick some of that up if it means having these again. Could I just swap out eggs for the flour since eggs are often binders in these? Or could I put in a few eggs for both the flour and the cornstarch? I don't want to add an eggy flavor, but I'm not sure if that would happen... I have coconut flour too, would that work?

    So what would y'all do to make it primal?

    Feel free to try it yourself, but definitely don't use canned beets, those are kinda nasty. Wear some gloves to keep the beet juice off your fingers, too...and be warned: shredding by hand takes forever. I might buy myself a superduper food processor before trying to shred all this junk again.

    Ahh so does this mean that latkes usually don't have flour and this was just some sort of vegan abomination of a latke? Because if that's the case, I will be making this as soon as I get some good beets!

    they usually do have matzo meal (ground up crackers) but you can get away without them if you're using eggs.

    My family's latke recipe doesn't use flour or matzoh meal, though most recipes do. The trick to getting them to stay together without it is squeezing out a lot of the moisture from the grated vegetables, then adding some egg.

    So, I'd definitely leave out the water in this recipe when you primalize it.

    How do you squeeze out the water? With your bare hands, or using a potato ricer or something?

    Vigorously!

    I typically put the grated potato/onion mixture in a colander, than take out handfuls and squeeze them over the sink, and transfer to a mixing bowl. Recently, I've started wrapping the mixture in a cheese cloth before I squeeze it to make it a bit easier. So, the basic latke-making process is:

    1. Shred veggies
    2. Squeeze!
    3. Add seasonings, egg, and any other binders (like potato starch or arrowroot)
    4. Fry

    you can squeeze everything in a dish cloth to get the liquid out
