Annika, what about cesear salad?!? Add 1 lemons worth of juice, 1 tsp worchestershire sauce, 1 tbsp anchovie paste, 2 cloves of garlic, 1 tbsp of onion and 1/4 cup or more of parmesan cheese and blend. I then usually add a couple tbsp of sour cream and a drizzle of heavy cream until it's the consistancy I like. If you aren't big on dairy, go with coconut milk! Then serve on greens (I usually do a mix of romaine and baby spinach) I cut up bacon really small and cook it up and serve instead of croutons! Yum!

Then I use the left over dressing for BLT or club salad. Add tomato for blt, and chicken/turkey for the club. mmmmmmmmmmmmm... I could drink the stuff. *blush*

Earthmomma, as always, you are my hero. I was having the same issue - I was so gung-ho to make the darn stuff once I had it I just sort of looked at it like, "What next?!" But my various oil-&-vinegar dressings just suck outright so a chance to put something creamy on my mixed greens is AWESOME. THANK YOU.

I googled the earth for a bacon mayo recipe and what I found was a consensus that saturated fats won't emulsify unless you mix a substantial amount of unsaturated fats with them. So you had success with the mayo not "breaking"? I'm praying the answer is yes!!!

    Any secrets?

Thankyou! In The Primal Cookbook Mark suggests saving the bacon fat to make mayo, but alas there was no recipe on how to make it.
Yay, will be saving the bacon fat and giving it a go myself.
