    Liver!

    One of my neighbors raises meat rabbits. I popped over to pick up a couple of fryers and she gave me a baggie full of rabbit livers to try.

    Today for lunch I fried them up in bacon griz with a little salt, pepper, just a touch of granulated garlic and a shake of dried basil. I plopped 'em on a big bed of baby spinach with the pan drippings and OMG! I think even someone who doesn't really like liver would go for these.

    Now I can't wait to get some more! Hope she's not the rural Utah version of a crack dealer - free samples and then jack up the price.

    That reminds me - I'm hungry.

    (Today's lunch: purple sprouting broccoli, chicken livers, chicken stock. Just 3 things in a pan. Fantastic.)

    love, love, love liver!!! Have only had chicken and beef but I absolutely LOVE it!! I saute them in butter with onions and peppers and put hot sauce on them. LOVE!!!!
