I checked Endangered Species gluten free but not soy free.
Hageland Chocolate has a nice "Costa Rica" one that I enjoyed prior to starting Whole 30 this month

Lindt is my favorite (should be easily available in Canada), I like their 85% and 95% ones. There is only cocoa their and a tiny bit of sugar (more in the 85% than in 95%) but that is it. No emulsifier (hence no soy) is usually needed after 85-90% cocoa
I like the Lindt 85% but on occasion I have problems with it. They told me it may be cross contaminated with gluten since it is done on the same lines as their gluten containing products.
I don't think Hageland Chocolate is available where I am.
