    Ham Shank Remains

So I was craving ham steak and ended up buying a ham shank cuz all the steaks had sugar in them *sigh*. Anyway, the house smells crazy good, and the beautiful pink piggy shank is cooling. What can I do with the skin and gooey stuff inside the bone? (btw, ohmigosh, that stuff is A-MAY-ZING! Like PUDDING)
There's some fat attached to the skin, and I hate to be wasteful. It all looks so yummy.

Can I make pork rinds from the skin? How? Or a stock, maybe? Ideas & recipes, please, and STAT!

We eat a lot of that stuff in this house. I have a bag in the freezer with chunks of bone, fat from shanks and other ham like bits. Once I get enough, then I'll make a nice yummieo hamstock in the crock pot.

I do the same with chicken carcasses too, throw em in the freezer till the mood strikes me to make stock, or I have several in there.

Oh, ham soup is wonderful! Load it up with vegetables and throw in some chunks of meat (either ham or other) and you have a delicious meal. You can also do a mixed bone broth if you have other kinds of bones in your freezer.

Ooh, ham hock soup! I could do that. Hubby could probably take it for lunch or something.
